Tourists review one app; locals review the other. We pull every rating from both, put them through the same adjustment, and show you the gap instead of averaging it away. When the two crowds disagree about a restaurant, that disagreement is usually the most useful thing on the page.
The 18 widest gaps
Each row is one restaurant. The amber dot is its Google rating, the green dot TripAdvisor's; the bar between them is the disagreement. Scale runs 4.0 to 5.0. A single = dot means both platforms published the same number — which is not the same as both crowds being equally sure. The Jackaroo Bar and Grill sits at 4.9 on both, but that is 840 Google reviewers against 129 on TripAdvisor, and the adjustment below treats those as very different claims.

How the numbers are built
Why two platforms at all?
A single rating is a single audience. TripAdvisor's Ho Chi Minh City reviewers are overwhelmingly visitors — people staying a few nights, often in the same District 1 hotels whose restaurants they then review. Google's Vietnamese-language review base is far larger and far more local. Neither is wrong. But a restaurant that scores 5.0 with one and 4.2 with the other is telling you something an average would erase.
The adjustment, in full
Both platforms' scores go through the same Bayesian adjustment — a prior of 4.45 with weight 150 — so a 5.0 from 95 reviewers cannot outrank a 4.8 from 3,900. Without it, the top of this list would be whichever hotel lounge had the fewest, happiest reviewers. With it, review count is a claim to be weighed rather than a footnote — which is why Palsaik Korean BBQ's 3,590 Google reviews outrank several nominal 5.0s.
Reading the divergence index
The divergence index is the gap between the two adjusted scores, centred on the median across all fifty. Positive means Google's larger, more local sample likes it more than TripAdvisor's traveller sample does. Negative means the reverse. In practice: above +0.12 we call it Google-leaning, and TripAdvisor's own award flag plus a negative index gets a TripAdvisor-leaning stamp. Everything else is either consensus or a genuine split.
What this list cannot tell you
This is an audit of TripAdvisor's award, not a claim to have found every great kitchen in Saigon. Travelers' Choice voting follows tourists, so a cơm tấm counter that has fed the same block for thirty years will never appear here. It also cannot tell you about a bad night, a changed chef, or a kitchen that has coasted since it won. Ratings lag reality by months. Cross-check the most recent reviews on both platforms before a special occasion.
